BEING GREEN
We make every effort to be environmentally conscientious. Whenever possible we source our vegetables and cheese from local and organic farmers. Buying from local farmers saves transportation fuel, supports the local economy, and helps preserve New Jersey open space. Buying local also makes for fresher and more delicious ingredients. In season, we grow our own basil, herbs, and tomatoes.
We use 'bioplastic' tableware. Bioplastic is made from corn and sugar cane. It is biodgradable and compostable. We use napkins made from recycled paper.
