Our pizza and salads are made with organic, locally sourced and fresh ingredients.
In season, we grow our own basil and herbs.
We make our own dough, in small 5lb batches at least 24 hours in advance, allowing the dough to rise slowly during refrigeration. Slow rising dough makes for more subtle and complex flavors.
In the tradition of Italian pizza making, we use few toppings. We focus on great crust, amazing tomato flavor, delicious locally made cheese, organic extra virgin olive oil, sea salt and fresh basil. We do use some meat and vegetable toppings, but sparingly.
